How to make it
1. Shake the egg whites with 1 ice cube for about 10 seconds (until foaming occurs).
2. Add extra ice, the S72 gin, the violet syrup and the lime juice.
3. Shake for about 15 seconds (if the shaker is fogging up, this means that the content is sufficiently chilled).
4. Pour through a fine sieve in a coupe glass and finish with a violet.
